Blueberry Lemon Overnight Oats
These blueberry lemon overnight oats are bright, creamy, and made with frozen berries for a simple make-ahead breakfast you can enjoy any time of year. They come together in just 10 minutes and chill overnight, so you wake up to a filling, gluten and dairy free breakfast that is ready to grab and eat. With rolled oats, chia seeds, maple syrup, lemon zest, and frozen blueberries, these overnight oats are a fast and reliable way to start your day.

I have been eating these overnight oats nonstop for the last two weeks, and I am not slowing down anytime soon. They’re creamy, fresh, and lightly sweet with pops of lemon and blueberries in every bite. Frozen berries make them so easy to prep year round.
Typically, I make a double batch and keep them in a large glass container in the fridge. Since I work from home, I grab a bowl as needed. But if I’m headed to a baseball tournament, I pack them in smaller containers, skip the pretty toppings, and eat them with the baby while watching the big boys play ball.
These overnight oats are filling enough for long workdays and perfect for an easy snack. They keep well in the fridge, pack easily, and they take zero thought when life gets hectic.
I make mine with Forager Greek yogurt for some added protein. You can top them with granola (this almond pulp granola is super tasty with them!), cocoa nibs, more yogurt, or even a squeeze of lemon if you want a brighter flavor. However you serve them, they’re simple, satisfying, and so good.

Ingredient Notes
Rolled Oats – Make sure your oats are gluten free if needed. I always use Bob’s Red Mill GF Rolled Oats because they’re pretty easy to find, and always taste great.
Yogurt – Your favorite non-dairy, or dairy based yogurt will work. Make sure it’s plain, unsweetened, or adjust the maple syrup as needed. I really love Forager Greek Style Cashew Yogurt in this one.
Milk – Any unsweetened non-dairy or dairy based milk will work. Cashew milk is my preferred milk. I always have a box of Elmhurst on hand in case I’m out of homemade cashew milk.
Frozen Blueberries – Regular frozen berries or wild blueberries will work. You can use fresh blueberries if you’d like, but the frozen ones add more flavor.

How To Make Frozen Blueberry Overnight Oats

In a medium bowl, mix oats, chia seeds, shredded coconut, yogurt, milk, maple syrup, lemon zest, vanilla, and salt. Stir well until combined.
Gently fold in frozen blueberries. Cover the bowl and refrigerate for at least 4 hours or overnight, until the oats are soft and the mixture thickens.

To serve, gently stir the mixture to keep the blueberries whole. Divide it between 2-3 jars or glasses.
Top each with a spoonful of yogurt, granola, cocoa nibs, extra chia seeds, and fresh blueberries.

- If the mixture gets too thick, stir in a splash of milk before serving.
- Greek yogurt will make these a bit thicker and creamier.
- Fresh or frozen blueberries both work. Frozen berries give the oats a pretty purple color overnight, and I think a better flavor.
- Store overnight oats in an airtight container in the fridge for up to 4 days.
Toppings and Variations
Most of the time, I don’t top these oats with anything, but if I have granola or hemp seeds, those are a great addition. Cacao nibs or Simple Mills Honey Cinnamon Sweet Thins add a bit of fun crunch.
If you love lemon flavor, you can add more lemon zest.
Extra yogurt on top makes it feel fancy and adds creaminess. I love Cocojune brand for topping. It gives a little extra coconut flavor that’s super tasty.

Up to 4 days. If the mixture thickens too much, just stir in a splash of milk before serving.
Yes. The mixture will be slightly thinner, but still tasty. You can reduce the milk by 1 to 2 tablespoons if you want a thicker consistency.
If you don’t have lemon zest, you can skip it, but the flavor won’t be as bright. Lime zest also works and adds a fun twist.
