These blueberry lemon overnight oats are bright, creamy, and made with frozen berries for a simple make-ahead breakfast you can enjoy any time of year. They come together in just 10 minutes and chill overnight, so you wake up to a filling, gluten and dairy free breakfast that is ready to grab and eat. With rolled oats, chia seeds, maple syrup, lemon zest, and frozen blueberries, these overnight oats are a fast and reliable way to start your day.

Ingredients

  • 1 cup rolled oats gluten free if needed
  • 2 tablespoons chia seeds
  • 2 tablespoons shredded coconut unsweetened
  • 1 cup plain yogurt unsweetened, dairy free if needed
  • 1 cup cashew milk or any dairy/non-dairy milk of choice
  • 2 tablespoons maple syrup
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • 1 cup frozen blueberries

Optional Toppings

  • granola, chia seeds, hemp seeds, yogurt, cocoa nibs, fresh blueberries

Instructions

  • In a medium bowl, mix the oats, chia seeds, shredded coconut, yogurt, milk, maple syrup, lemon zest, vanilla, and salt until well combined.
  • Gently fold in the frozen blueberries. Cover and refrigerate for at least 4 hours or overnight, until the oats soften and the mixture thickens.
  • Before serving, give the oats a gentle stir to keep the blueberries whole. Divide into 2–3 jars or bowls.
  • Add your favorite toppings such as yogurt, granola, cocoa nibs, extra chia seeds, or fresh blueberries.

Notes

  • If the mixture gets too thick, stir in a splash of milk before serving.
  • Greek yogurt will make these a bit thicker and creamier.
  • Fresh or frozen blueberries both work. Frozen berries give the oats a pretty purple color overnight, and I think a better flavor.
  • Other toppings you can try: chopped nuts, extra lemon zest, nut butter, hemp seeds, chocolate chips, or Simple Mills Honey Cinnamon Sweet Thins for a pie-like crunch.
  • Store overnight oats in an airtight container in the fridge for up to 4 days.
